Date muffins with walnuts
Ingredients:
- 240 ml almond milk
- 1 egg (beaten)
- 75 grams of walnuts, unsalted
- 150 grams of dates , pitted
- 260 grams almond flour
- 130 grams of date syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 5 tablespoons butter
Preparation method:
- Preheat the oven to 200 degrees Celsius (top and bottom heat).
- Chop the walnuts and dates.
- Mix the almond milk, vanilla extract, date syrup and egg together in a bowl.
- Then add the almond flour, salt and baking powder. Mix it together until the flour is well incorporated. Then melt the butter on a low heat.
- Then stir the walnuts and dates into the mixture and then add the melted butter.
- Pour the batter into muffin cups
- Bake the muffins for 18 minutes until golden brown.
