Date energy balls
Ingredients:
- 295 grams dates, pitted
- 50 grams pecan nuts, unsalted
- 65 grams cashew nuts, unsalted
- 2 tablespoons cocoa powder
- 2 tablespoons butter
- 1 tablespoon unsweetened almond milk
- ½ teaspoon vanilla extract
Preparation method:
- Place the dates, pecans and cashews in a food processor and blend until smooth.
- Add the rest of the ingredients in the following order (cocoa powder, butter, almond milk, and vanilla extract) to the food processor and blend the mixture until it begins to resemble a whole.
- Then roll 1 tablespoon of the mixture into balls and place them on a lined baking sheet.
- Put them in the fridge overnight and your date energy balls are ready!
Tip: They can be stored at room temperature, but will last longer in the refrigerator or freezer.
