Berry brownie yogurt parfait
Ingredients:
Brownie layer:
- 100 grams of walnuts , unsalted
- 15 Sukkary dates , pitted
- 50 grams of cocoa powder
- 15 grams of almond flakes
- ½ teaspoon salt
Berry compote:
- 300 grams frozen forest fruits
- 2 tablespoons fresh lemon juice
- 2 tablespoons maple syrup
- 1 tablespoon cornstarch
- 1 tablespoon water
Yogurt layer
- 250 grams almond yogurt
- 40 ml date syrup
- 1 teaspoon vanilla extract
Other
- Food processor
Preparation method:
Brownie layer:
- Grind the walnuts in a food processor. Then add the cocoa powder and salt and mix until well combined. Then add the dates one by one. Turn off the food processor as soon as the mixture looks crumbly. Then add the almond flakes and grind them too,
- In a small baking tin, press the brownie mixture into a layer of at least 3 cm thick (even if it doesn't fill the entire baking tin). Then put it in the freezer for 15 minutes.
Berry compote:
- Combine the frozen berries, fresh lemon juice and maple syrup in a frying pan. Place the pan on medium heat and stir for a few minutes until the fruit has thawed.
- In the meantime, mix the cornstarch and water in a small bowl and pour it into the frying pan. Keep stirring until the sauce has thickened.
Yogurt layer:
- In a bowl, mix the almond yogurt, date syrup and vanilla extract.
- Make the parfait by alternating a layer of yogurt, a layer of brownie crumbs and berry compote in a tall glass.
